There are certain games where speed matters. A blackjack dealer who is only able to complete a shoe in 30 minutes is potentially costing you money if you happen to be on a roll. Therefore, it is less about speed and more about being at the right machine at the right time. I do not know of anyone who chose to break the bank by playing video poker so sitting back and taking all the time you need to go through a hand from beginning to end is completely understandable.
The computer does not let you take back any mistake you may make unlike blackjack where at the last second you can call off your decision to hit or stand. With that in mind, it is important to make sure that you are discarding cards you do not want and replacing them with potential winning hands. There are usually enough video poker machines available that there should be no reason to feel pressured into rushing through a hand.
